Paint me like one of your french girls! đ¨ Yellowtail crudo with orange, fennel & red hot chili peppers. Recipe belowđâ
â
So what’s the difference between sashimi and crudo? Let’s get cultured, fam. Sashimi is a Japanese preparation that is made with expertly cut raw fish typically served with a side of soy sauce, wasabi, and pickled ginger while crudo is an Italian preparation of raw fish drizzle with olive oil and typically cured with citrus.â
â
đ Since the fish will be consumed raw it is important to purchase sushi or sashimi-grade fish, which is typically flash frozen soon after it’s caught to maintain it’s fresh quality. I am using Yellowtail for this recipe, a mild-flavored fish with a firm texture and buttery taste when served raw.â
â
INGREDIENTS: â
â
1 fillet of sushi-grade Yellowtail, skinless and boneless â
â
1 tbs olive oilâ
â
1 tbs freshly squeezed orange juiceâ
â
1 tsp freshly squeezed lime juiceâ
â
1 tsp finely chopped shallotâ
â
1 tsp thinly sliced green onion, diagonal â
â
1 tbs thinly sliced cucumber, cut into quartersâ
â
1 tbs thinly sliced fennelâ
â
1 tsp thinly sliced orange, cut into trianglesâ
â
1 tsp thinly sliced red hot chili pepper (optional)â
â
Coarse kosher or sea salt â
â
PREPARATION: â
â
In a bowl mix together the shallots, cucumber, fennel, orange, green onion, red hot chili pepper, olive oil, and citrus juices and set aside.â
â
Thinly slice the Yellowtail and add to the bowl with sauce, toss and arrange the fish on a plate, folded in half. Pour the remaining sauce over the top of the fish. Top with salt and you can garnish with fennel leaves. Serve immediately. â đĽ°â
