Tuna Crudo

Tuna Crudo recipe ⬇️

🐟 Since the fish will be consumed raw it is important to purchase the highest-quality tuna, preferably a thick piece from the loin. The tuna needs to spend 10 minutes in the freezer before it is sliced. ⁠

INGREDIENTS: ⁠

1 thick piece of tuna (preferably from the loin) ⁠

1 tbs olive oil⁠

1 tbs freshly squeezed orange juice⁠ or lemon juice⁠

1 tsp freshly squeezed lime juice⁠

1 tsp fish sauce⁠

1 tsp thinly sliced shallot⁠

1 tsp thinly sliced jalapenos (optional) ⁠

1 tbs capers, drained well⁠

1/4 tsp crushed red pepper flakes⁠

3-4 leaves basil, thinly sliced ⁠

Avocado, sliced for garnish⁠

⁠Coarse kosher or sea salt ⁠

PREPARATION: ⁠

Place the tuna in the freezer for 10 minutes; this helps it firm up, which makes it easier to slice. ⁠

In a bowl mix together the shallots, red hot chili pepper, jalapeno, capers, basil, olive oil, fish sauce and citrus juices. Set aside.⁠

Thinly slice the tuna. As you work, gently press each slice onto the cutting surface with your fingers, to flatten it, then transfer to a serving platter, arranging the slices in 1 layer. ⁠

Spoon the vinaigrette over the fish and sprinkle with salt. Garnish with avocado and serve immediately. ⁠
