Watermelon Poke Bowl

This one goes to all my foodies who are craving a good poke bowl but are pregnant #norawfishlife or maybe you are vegetarian, or allergic to fish or your broke ass can’t afford sushi grade Tuna… no judgement here I got chu… This watermelon poke bowl slaps! 

RECIPE (It serves 2 people or one 8 month pregnant woman): 

1️⃣ In a medium bowl add: 

2 cups of diced watermelon
1 avocado, diced
¼ thinly sliced red onion
1/4 english cucumber, diced 
If you want jalapeno, add ¼ – ½ jalapeno thinly sliced
2 tbsp chopped cilantro
1 tbsp green onion, sliced 

2️⃣ In a small bowl mix: 

½ lime, juice
2 tbsp soy sauce (low sodium is best)
1 tbsp ponzu sauce 
1 tsp sesame oil
1 tsp fish sauce 
1 tsp honey
½ tbsp olive oil
Red pepper flakes (optional)
Pinch of salt (go easy on this one, soy sauce has plenty)

3️⃣ Pour sauce over the watermelon mix, combine well but gently. Season to taste, you may want to add a little more sesame oil or soy sauce or salt, do your thing. Let sit for a few minutes (about 5 if you were gifted with the virtue of patience).

Serve on a bed of steamy jasmine rice, top with sesame seeds and spicy mayo (combine mayo with sriracha and a few drops of soy sauce). ENJOY! #onehungrychica
