Soy Glazed Chicken Thighs with Grilled Pineapple

Am I the only one craving grilled food? It feels like summer is here already and grilled food is all I can think of! Soy Glazed Chicken Thighs recipe – cuz who said that no-carb meals have to be boring!? #nocarbshappythighs ⁠

I served these juicy bad boys with grilled pineapple. How to grill 🍍 you say? Slice pineapple, cut in quarters, remove core, sprinkle brown sugar on both sides. Spray a little bit of oil on a grill, griddle or skillet and cook for a few minutes until you get that nice golden brown. Grill marks are sexy but you don’t need them to enjoy these babies 🔥 ⁠

Soy Glazed Chicken Thighs: ⁠

Ingredients: ⁠

2-4 chicken thighs, boneless & skin on⁠

¼ cup soy sauce⁠

¼ cup rice vinegar or apple cider vinegar ⁠

2 tbsp brown sugar ⁠

Salt & Pepper⁠

Preparation:⁠

1️⃣ In a container or large Ziplock bag, mix soy sauce, vinegar and brown sugar. Season chicken with salt and pepper but be mindful of not using too much salt, as the soy sauce is salty. Throw chicken thighs in bag, mix well and let marinate for 15 minutes up to 1 day.⁠

2️⃣ You can grill these or cook them indoors on a skillet or cast-iron pan. I cooked mine on a cast-iron griddle over medium heat. Oil the surface you are cooking on, get that nice heat going. Depending on the size of the thighs, you may want to cut in half. Shake off excess marinate (keep extra marinate aside) and cook skin side down first. Cook each side for about 5-6 minutes, get that nice color on both sides but don’t overcook. ⁠

3️⃣ While you cook the chicken, put the marinade in a small pot over low-medium heat and let reduce. Once the chicken is cooked, place on a plate and let rest for 2-3 minutes, throw the chicken juice that comes out in the reduced glaze. Brush chicken thighs with the glaze and serve immediately. You can serve with grilled pineapple and top with fresh cilantro, onions and hot peppers. ENJOY! ⁠
