Street Corn a.k.a Elote

Street Corn FTW! Let me share “Elote” love with ya’ll ❤️ You can easily make this classic Mexican street food right at home. Baked or Grilled! The key to this recipe is the sauce, it’s TO DIE FOR!⁠ 🤤

INGREDIENTS: ⁠

1/2 cup mayonnaise⁠
Juice of 1 lime⁠
1/2 teaspoon of minced garlic⁠
Chili powder⁠
Cotija cheese, crumbled⁠
Fresh cilantro, chopped⁠
3-5 ears of Corn (in the husk)⁠
Salt and Pepper ⁠

DIRECTIONS: ⁠

1. Preheat oven to 400 degrees F.⁠
2. In a small bowl, combine mayonnaise, garlic and lime juice. Season with salt and pepper; set aside.⁠
3. Place corn husks directly on the oven rack and roast until corn is soft, about 35-40 minutes.⁠
4. Peel down husks and spread with creamy sauce.⁠
5. Garnish with cotija cheese, chili powder and cilantro. Serve immediately and ENJOY!⁠

Life Hack: You can use the husk (after cooking the corn!) as a cob holder by tying it with twine. Cute and simple!
