Ingredients

  • fillet of sushi-grade Yellowtail, skinless and boneless ⁠
  • tbs olive oil⁠
  • tbs freshly squeezed orange juice⁠
  • tsp freshly squeezed lime juice⁠
  • tsp finely chopped shallot⁠
  • tsp thinly sliced green onion, diagonal ⁠
  • tbs thinly sliced cucumber, cut into quarters⁠
  • tbs thinly sliced fennel⁠
  • tsp thinly sliced orange, cut into triangles⁠
  • tsp thinly sliced red hot chili pepper (optional)⁠
  • Coarse kosher or sea salt ⁠

Directions

  1. Since the fish will be consumed raw it is important to purchase sushi or sashimi-grade fish, which is typically flash frozen soon after it’s caught to maintain it’s fresh quality. I am using Yellowtail for this recipe, a mild-flavored fish with a firm texture and buttery taste when served raw.⁠
  2. In a bowl mix together the shallots, cucumber, fennel, orange, green onion, red hot chili pepper, olive oil, and citrus juices and set aside.⁠
  3. Thinly slice the Yellowtail and add to the bowl with sauce, toss and arrange the fish on a plate, folded in half. Pour the remaining sauce over the top of the fish. Top with salt and you can garnish with fennel leaves. Serve immediately. ⁠🥰⁠
