🐟 Since the fish will be consumed raw it is important to purchase the highest-quality tuna, preferably a thick piece from the loin. The tuna needs to spend 10 minutes in the freezer before it is sliced. ⁠

Ingredients

  • thick piece of tuna (preferably from the loin) ⁠
  • tbs olive oil⁠
  • tbs freshly squeezed orange juice⁠ or lemon juice⁠
  • tsp freshly squeezed lime juice⁠
  • tsp fish sauce⁠
  • tsp thinly sliced shallot⁠
  • tsp thinly sliced jalapenos (optional) ⁠
  • tbs capers, drained well⁠
  • /tsp crushed red pepper flakes⁠
  • -leaves basil, thinly sliced ⁠
  • Avocado, sliced for garnish⁠
  • ⁠Coarse kosher or sea salt ⁠

Directions

  1. Place the tuna in the freezer for 0 minutes; this helps it firm up, which makes it easier to slice. ⁠
  2. In a bowl mix together the shallots, red hot chili pepper, jalapeno, capers, basil, olive oil, fish sauce and citrus juices. Set aside.⁠
  3. Thinly slice the tuna. As you work, gently press each slice onto the cutting surface with your fingers, to flatten it, then transfer to a serving platter, arranging the slices in layer. ⁠
  4. Spoon the vinaigrette over the fish and sprinkle with salt. Garnish with avocado and serve immediately. ⁠
