Ingredients
- fillet of sushi-grade Yellowtail, skinless and boneless
- tbs olive oil
- tbs freshly squeezed orange juice
- tsp freshly squeezed lime juice
- tsp finely chopped shallot
- tsp thinly sliced green onion, diagonal
- tbs thinly sliced cucumber, cut into quarters
- tbs thinly sliced fennel
- tsp thinly sliced orange, cut into triangles
- tsp thinly sliced red hot chili pepper (optional)
- Coarse kosher or sea salt
Directions
- Since the fish will be consumed raw it is important to purchase sushi or sashimi-grade fish, which is typically flash frozen soon after it’s caught to maintain it’s fresh quality. I am using Yellowtail for this recipe, a mild-flavored fish with a firm texture and buttery taste when served raw.
- In a bowl mix together the shallots, cucumber, fennel, orange, green onion, red hot chili pepper, olive oil, and citrus juices and set aside.
- Thinly slice the Yellowtail and add to the bowl with sauce, toss and arrange the fish on a plate, folded in half. Pour the remaining sauce over the top of the fish. Top with salt and you can garnish with fennel leaves. Serve immediately. 🥰
